The problem with the excuse is that your friend and people like her who haven't taken charge of their lives need to stop making the excuses to themselves, not to other people. If they stopped waking up in the morning and saying "Oh well, I'm fat, that's just how it is." and instead said "Today I'm going to start getting more healthy." or did something to gradually loose the weight, they'd be healthier. It is true though that thin doesn't mean healthy. but it is much more likely for someone who is severely overweight to have health problems than someone who's thin who doesn't excercise. I think someone took umbrage to your venting your frustrations in an anonymous forum, but clearly if you were so shallow as to completely judge people by their appearance you would not still be friends with the woman you spoke of, unfortunately I have known some people who are that shallow.
